Why sample plans are so unhelpful

Search for a HACCP plan example and you will mostly find plans written for manufacturers — a fish smokehouse, a juice bottler, a meat plant. They are real documents and they are correct for those businesses, which is exactly why they cannot tell you what belongs in yours.

The parts that differ are the parts that matter. Which of your dishes are TCS foods. Which steps are genuine control points rather than good practice. Which hazards you are entitled to rule out, and on what grounds. A sample answers none of that, because those answers are about your kitchen.

What every restaurant plan contains

The structure is not a mystery and it does not change much between kitchens. Nineteen sections, in this order, whether you run a taco truck or a forty-seat dining room.

What changes between them is the content of the hazard analysis, which dishes get cards, which procedures get written, and which records you are expected to keep. That is the part Sage works out from your answers.

What a plan is not

It is not a certificate, and having one does not certify anything. It is not approved by a regulator — no regulator approves, certifies or guarantees a HACCP plan, and any product implying otherwise is one to walk away from.

It is a document that says what you do, why it is safe, and how you would know if it stopped being safe. Signed by you.

What Sage will not do

She builds plans for restaurants in the United States against the FDA 2026 Food Code. She cannot finish a plan involving a special process — sous vide, reduced-oxygen or vacuum packaging, cook-chill, curing, preservation smoking, acidification including acidified sushi rice, fermentation for safety, sprouting, raw molluscan shellfish, juice HACCP, unpasteurized products or low-acid canned foods. Those are screened early and a yes stops the conversation. Canada is not supported yet. Local authorities can require more than the Food Code, and no regulator has approved, certified or guaranteed any document she produces.

Questions people ask first

Can I just download a HACCP plan template and fill it in?
You can, and the formatting will be fine. The formatting was never the hard part. A template cannot tell you which of your dishes are TCS foods, which steps are genuine critical control points, which hazards you may rule out, or what number belongs in the critical limit column with a source behind it — because those are facts about your kitchen, not about the document.
How long is a restaurant HACCP plan?
Nineteen sections, plus a card for every dish, plus the procedures your operation calls for and a blank copy of every record the plan relies on. A small menu produces a shorter binder than a large one. There is no target length and padding one is a bad idea — everything in it is something you are committing to do.
Do I need a different plan for each location?
Yes. A plan describes one establishment: its equipment, its layout, its suppliers, its staff. A second location gets its own plan, which is why the packages are priced by how many active plans they cover.
